Yadda ake yin "Dolmades na nama" a Turkiyya

Idan muka dubi nau’in abincin “Dolma” ko “Dolmades” kamar yadda ake kiranshi a wasu harsunan ainihinsa nau’in abincin kasar Turkiyya ne. Kuma ya samu asaline daga kalmar “Dolmak” wato cikewa a yaren Turkanci.

A fadin duniya al’umma daban-daban na sarrafa abinci ta hanyar cika ganyayyaki da kayan lambu da wasu nau’o’in abincin. A yayinda mutanen yankin tsakiya da kudancin Amurka ke amfani da ganyen masara da na ayaba, mutanen yankin gabashin duniya na amfani da ganyen dabino, kwakwa ko na bishiyar Bomboo. A Turkiyya dai ana iya amfani da ko wani irin kayan lambu domin sarrafa ire-iren wadannan abincin da ake gudanarwa da ganyayyaki. Turkawa dai an irin wannan abincin ta mafani da tun daga Gauta zuwa Artichoke, Kabeji zuwa Tumatir, Borkono zuwa Kabewa. Kuma ya samu asaline daga kalmar “Dolmak” wato cikewa a yaren Turkanci. A yau zamu bayyana muku yadda ake yin “etli yaprak sarması” wato nadadden nama a ganye a kasar Turkiyya. Da farko dai kalmar “sarma” a yaren Turkanci na nufin nadewa ko dunkulewa.  A yayinda sau da yawa ana kiran wannan abincin da sunan “dolma” a kasar Turkiyya ana kiran wannan nau’in abincin da sunan “Sarma” wanda ake yi da borkono, kabewa, gauta ta hanyar nadesu a cikin ganyen alleyahun chard ko kabeji.

 

Ga dai kayyayakin da akre bukata domin yin Etli  yaprak sarması;

 

250 gram na ganyen inabi

Kayyyyakin da za’a sanya cikin ganyen;

Albasa daya da aka yayyanka

250 gram na naman da aka yayyyanke kanana kanana

Kofi daya na shinkafa

Cokalin miya biyu na yankakkun faski wato parsley.

Rabin cokalin shayi na giashiri

1/4 cokalin shayi na borkono

A yayin dafuwa :

Cokali daya na nikekken tumatir

Cokalin miya uku na man zaitun

Kofi daya da rabi na ruwa mai zafi

Rabin cokalin gishiri

 

Yanzu kum sai yadda za’a dafa “etli yaprak sarması” wato dolman nama;

Da farko dai ana bukatar a sanya ganyen inabin cikin ruwan  zafi a rufe har na tsawon minti biyar domin kurar dake kan jikin ganyen ya fita. Bayan haka sai a fitar da ganyen daga ruwan zafin a dauraye a cikin ruwan sanyi a kuma tatse.

A wannan  yanayin za’a tattaro kayyayakin da za’a sanya a cikin ganyen da sunka hada da albasar da aka wanke aka kuma yayyanke, faski, borko, yankakkun nama, yankakkun kabewa da shinkafan a hade a kuma motse a hankali.

Sai kuma yadda za’a hada dolman;

Za’a dauki ganyayyakin daya bayan daya a shinfida kan guri mai fadi da laushi.

Daga nan kuma sai a yanke idon ganyen da yuka mai kaifi, sai a debu hadin naman a zuba akan ganyen a shinfide sai a nade tamkar yadda ake nade tabarma bayan an rufe karshen ganyen.

Za’a gudanar da hakan da dukkanin ganyayyakin.

Wadannan nadaddun gayyayakin da kayayyakin naman a cikinsu za’a sanya su a cikin tukunya a rufe a dora akan murhu. Dangane da yawan nadaddun ganyen za’a iya yin tukunya biyu ko uku.

A cikin wani kwano sai a sanya ruwan zafi, man zaitun, nikekken tumatir da gishi a motse sai a zuba akan dolman da ake dafawa.

Za’a ci gaba da dafawa tukunyan na rufe har na mintuna 40. Za’a iya zuba Yoghurt a gefe yayin rabawa.
